Rice is a regular part of meals in many Nigerian homes. Sometimes, there is enough food left after lunch or dinner to save for another day. But leftover rice can become unsafe if it is left at room temperature for too long.
1. Rice can contain bacterial spores
Uncooked rice may contain spores of a bacterium called Bacillus cereus. These spores can survive the cooking process and later grow if cooked rice is stored improperly.
2. Leaving rice out for hours can be risky
When cooked rice stays at room temperature for too long, bacteria can multiply and produce toxins. This is why leaving a pot of rice on the kitchen counter overnight is unsafe.
3. Reheating may not remove every danger
Some toxins produced by bacteria can survive reheating. Heating rice until it is steaming hot does not necessarily make rice safe if it was stored badly beforehand.
4. Refrigerate leftovers quickly
Divide large quantities into smaller, shallow containers so they cool faster. Refrigerate cooked rice promptly, ideally within one hour in a hot environment.
5. Avoid repeated reheating
Only reheat the portion you intend to eat. Repeatedly cooling and reheating the same rice creates more opportunities for unsafe storage.
6. Watch for symptoms of food poisoning
Eating contaminated rice may cause vomiting, diarrhoea and stomach cramps. Symptoms can begin within hours, depending on the type of toxin involved.
Final thoughts
Cooked rice should not be left sitting out overnight. Store it promptly in a refrigerator and follow food-safety guidance for how long it can be kept. If rice has been left at room temperature for several hours, especially in hot weather, the safest choice is to discard it rather than risk food poisoning.
